About Scar of the Sea Topotero Ancestral

What if bubbles could capture the landscape they come from? In Avila Beach, just over a mile from the Pacific, Pinot Noir vines thrive amidst morning fog and constant ocean breezes. From this landscape emerges Scar of the Sea Topotero Ancestral, a carefully crafted sparkling rosé with a distinctive character, where the freshness of the Californian coast meets a delicate texture and a subtle hint of sweetness that makes it particularly alluring.
 
Scar of the Sea was founded in 2012 by Mikey and Gina Giugni with a vision as simple as it is ambitious: to create wines that tell the story of the land from which they originate. What began with working small plots along the coast took root until Avila Beach became the centre of their project. Today, they produce their wines with a natural philosophy, using indigenous yeasts, without additives and with measured intervention, allowing each plot to retain its personality. Scar of the Sea also operates under biodynamic principles and will be Demeter certified from 2024.
 
In Scar of the Sea Topotero Ancestral, the winemaking involves a degree of patient craftsmanship. The Pinot Noir grapes are foot-trodden, whole-cluster pressed, and fermented with their own yeasts in neutral French oak barrels. Before fermentation is complete, the wine is transferred to the bottle, where its own yeasts generate and preserve the bubbles. It remains on its lees for three months before manual riddling and disgorgement shape its final form. The result is a sparkling wine with a pale hue and fine, gentle bubbles, featuring fresh red fruits, ripe citrus, and herbal notes that glide over a slightly sweet, fresh, and very elegant texture.
